News of the Week

This Wednesday started with a pretty magical moment for me as an Arsenal fan.

After more than 20 years, Arsenal are finally champions again.

Twenty-two years to be exact. Back then I was still a school boy.

Now?

I’m a husband. A father. Building a life halfway across the world.

Funny how life changes.

That morning, after watching the game while getting the boys ready for school…

I dropped them off and started heading back to the car.

Then I heard:

“Daddy! I got something for you!”

It was Carter.

He handed me a small note.

“You are the best dad ever.”

That was it.

Simple.

But honestly?

It hit me harder than he’ll probably ever understand.

And it made me reflect on something important:

The world desperately needs more hope right now.

More kindness.

More empathy.

More people choosing to lift others up instead of tearing them down.

And the beautiful thing is…

Hope is often restored through small moments.

A kind word.

A compliment.

Holding the door.

Checking in on someone.

Treating people with respect.

Small intentional actions matter more than we realise.

That little note from my son restored something in me this week.

And strangely enough…

Arsenal winning after 22 years reminded me of the same thing:

Never lose hope.

Because eventually…

Consistent belief, small actions, and perseverance compound.

In football.

In parenting.

In life.

So today…

Be the source of kindness.

Be the source of hope.

Challenge yourself to make someone’s day better.

You never know how badly they might need it.

SESAME-GINGER BEEF

Serves 4

1 lb. (450g) skirt steak, thinly

sliced into ¼" (0.5cm) strips

salt & pepper

3 tbsp. cornstarch

1 tsp. + 1 tbsp. olive oil, divided

1 lb. (450g) green beans,

trimmed

3 cloves garlic, minced

3” (7.5cm) piece of root ginger,

peeled & grated

4 tbsp. tamari

1 tbsp. rice wine vinegar

3 tbsp. coconut sugar

2 green onions, chopped

1 tbsp. sesame seeds

What you need to do

Place the steak strips into a large mixing bowl and pat dry with

paper towels. Season with salt and pepper, and toss with

cornstarch until well coated, and set aside.

Add 1 teaspoon of olive oil to a large skillet over a medium

high heat, add the green beans and sauté for 1 minute. Add 2

tablespoons of water and cover with a lid to steam for a further

minute. Transfer the green beans to a plate and discard any excess

water.

Return the skillet to a high heat and add the remaining tablespoon

of olive oil. Add the steak strips and stir fry for 2-3 minutes until the

beef is almost cooked through. Reduce to a medium heat and add

the garlic, ginger, tamari, rice wine vinegar, and coconut sugar;

stirring quickly to coat the beef. Add the green beans back into the

pan and top with green onions and sesame seeds. Serve

immediately.
