One of those weeks where I briefly thought: "Maybe I should just fuckin quit." Not my family. Not my health. But the bigger vision I'm building. The mission. The thing God placed on my heart years ago. Then I got a timely reminder. One that applies to me... And probably to you too. If you're serious about creating a better life for yourself and your family, you need to understand two things:
Especially the time with your kids. Those are facts. Not opinions. Your children won't pause their childhood while you wait for work to settle down. Life won't magically become less busy. The perfect season isn't coming. Yet so many parents spend years saying: "When things calm down..." "After this project..." "Once work settles..." "Next Monday..." "Next year..." And then one day they look up and realise: The years went by. The kids got older. The opportunity passed. The fit, energetic parents you admire didn't wait for perfect conditions. They made a decision. They committed. They started. Not because it was convenient. Because it was important. The good old days aren't behind you. They're happening right now. Today. This season. This version of your kids. This chapter of your life. So stop waiting... Take the walk. Cook the meal. Start the thing. Have the conversation. Take the action. Today might be the day you look back on 10 years from now and say: "That was the day everything changed." Don't wait for perfect conditions. Create momentum. Your future self, and your family, will thank you for it. Recipe of the Week SLOW-COOKER CHICKEN TINGA Serves 6 14 oz. (400g) can chopped tomatoes 4 chipotle peppers in adobo sauce 1 diced yellow onion 1½ tbsp. coconut sugar 1 tbsp. garlic, fresh 2 tsp. smoked paprika 2 tsp. ground cumin 1 tsp. dried oregano juice of 1 lime 2 lbs. (900g) chicken breast What you need to do Add all the ingredients to the slow cooker bowl and mix together. Nestle the chicken breasts into the sauce. Cover with the lid and cook on HIGH for 4 hours, or on LOW for 6 hours. Remove the chicken breasts into a bowl, and using forks, gently pull the chicken apart to shred the chicken. Using an immersion blender, blend the tinga sauce until smooth. Now add the shredded chicken back into the sauce and thoroughly mix together. Cook on low for an additional 6-10 minutes to warm through. Enjoy in the Chicken Tinga Bowl, and Cheesy Chicken Tinga Quesadillas recipes found in this recipe pack.
